When we asked Eric what kind of cake he wanted for his birthday this year, he told us "a white cake". A plain jane white cake. So, I came up with the brilliant idea two days before the big day (which was last Thursday) to try to make him a baseball cake. My parents were in town helping us out for a couple days, so I knew I would be able to get some cake making and decorating tips from my Dad. First, I mixed up a simple white box-cake mix. Next, I poured the batter into two circle baking pans (half in each pan), and then put them in the oven to bake. When they came out of the oven I let them cool for awhile then took them out of the pans, stacking them onto a plate, with a layer of frosting in between the two layers of cake. Then I frosted the top and sides with white frosting. Next was the tricky part... drawing lines on the cake with red icing to make it look like a baseball, and writing "Happy Birthday Eric". This obviously takes practice. I was not good at getting the icing to come out at a manageable speed, so the top of the cake looked a little sloppy. Oh well, it is cake and icing, who doesn't love cake and icing?
Silas gave Daddy a red multipurpose tool and a card that he put stickers on and colored on by himself.
Phoebe gave Daddy gum and a card that she colored and wrote, "I LOVE YOU, PHOEBE" all by herself.
Sarah gave Daddy pickles and a card that she wrote and drew on all by herself.
Happy Birthday Dear Eric! Happy Birthday to YOU!
We all love you very much!
P.S. The cake was delicious.
